A while ago I spotted a gorgeous cake image on the Instagram account of Allison Sadler, someone I follow and admire. I then spotted it again in Mollie Makes which reminded me that I had to have a go! This cake was made by Allison’s daughter, incredibly cute and something I know my little lady would like to help me with.
I decided to go for multiple, thinner sponge layers. The buttercream recipe is one I always go to, it’s a Hummingbird Bakery frosting recipe. There is also some jam in there… a simple victoria sponge recipe, but with many more layers.
The icing was super simple and what I love most is that the cake doesn’t have to look perfect, the more of the sponge exposed the better! The bear I found online, it’s made by a company called Schleich. They have lots of other woodland animals to choose from and a rather handsome moose! I’m going to make another cake for the Christmas table later this month to which I’ll add a fox and hedgehog. I added some winter foliage and berries to the top next to the bear and the bunting was made by my friend, Klara from Birds in the Attic, which finishes the cake off perfectly.
